In 2015, Waterford transformed a state-of-the-art brewery into what it calls “The Facilitator,” an ultra-modern distillery dedicated to exploring the influence of barley provenance on flavour. The first spirit runs took place on 10th December 2015, followed by the distillation of exceptional 2016 harvest barley.\u003c\/p\u003e\n\u003cp\u003eBelieving that barley is king, Waterford meticulously distilled each farm’s barley separately, creating an extraordinary library of 36 individual single farm origin distillations.
